My Joy Is Full…Over Veggies

Tonight over dinner, the most wonderful thing happened. Evelyn ate a tomato. That earned a giant star and a huge applause.

But really, I cannot tell you how much joy I’ve had lately from watching my children learn to eat veggies. Now that life is settling down (I feel like it takes 6 months after a baby to feel somewhat normal again), we’ve been focusing on healthier foods.

About a month ago, I threw out all the candy and haven’t bought very much processed junk. As a result, I think all of our taste buds are changing… my kids ask for spinach and kale smoothies almost every morning. They can down a half a bag of carrots in a sitting and just this week they started asking for lettuce at the dinner table.

I never thought we’d get here and we still have a long way to go. They won’t touch brussel sprouts or broccoli. Blake still asks to make cookies every few days. (Sometimes we do!) And with summer coming up, I’m sure we’ll have our fair share of popsicles and road trip treats.

But life is all about progress and this is progress I’m so SO happy about!
